Bahama Style Snapper



1 banana, diced
¼ medium avocado, diced
1/8 teaspoon minced sorreno pepper
1 green onion, minced
1 tablespoon chopped cilantro
2 teaspoons lime juice
pinch of salt
1 cup pineapple juice
1 tablespoon amber rum
2 ounces sauce
2 teaspoons soy
1 small clove minced garlic
2 teaspoons pickled ginger, minced
4 red snapper filets, skinned
no stick pan spray



Combine the first 7 ingredients in a non-reactive bowl. Chill.

Combine the next 6 ingredients in a saucepan and reduce by 1/3.

To serve, pan sear the snapper filets using the non-stick spray in a non-stick skillet. Add sauce to reduce and coat.  Serve hot with a dollop of salsa.
