Bourbon Street Strip Steak



4 five ounce all natural New York Strip Steaks
1 teaspoon blackening seasoning
1 teaspoon canola oil
1 cup beef stock
2 tablespoons bourbon
2 tablespoons rum
2 tablespoons brandy
2 tablespoons orange flavored liqueur
2 teaspoons frozen orange juice concentrate
1/2 teaspoon orange zest
2 ounces reduced fat cream cheese, cubed



Dust the steaks with blackening seasoning then sear in a cast iron skillet with the oil to desired doneness.  Set the steaks aside, covered.  Add the remaining ingredients to the skillet and reduce, stirring with a wooden spoon to sauce consistency.  Add any accumulated steak juice.  Divide over steaks.
