Apple Basil Cobbler



18 Granny Smith apples (peeled and small diced)
2 tablespoons of butter
1 cup of apple juice
1 1/2 tablespoon of corn starch
2 tablespoon of ground cinnamon
1/2 tablespoon nutmeg
15 basil leaves
1 cup of sugar

1. Place apples, sugar and butter in medium size pot and allow to apples to cook and caramelize. Once apples are cooked add cinnamon and nutmeg. Lower the heat. Make a slurry out of the apples juice and corn starch by adding the two together and whisking. Whisk till the corn starch is dissolved. Add slurry to the pot and stir till becomes thick like a loose m. Poor mixture into a hotel pan and allow to cool. Once cool add chopped basil to mixture.
