Sweet Corn Soup with Avocado Cream and Cilantro

Preparation

SWEET CORN SOUP:
1/2 pound unsalted butter
1 quarts diced peeled potatoes
1 1/2 quarts diced yellow onion
1 chile de arbol
4 tbsp fresh thyme leaves from the garden
4 quarts frozen corn
6 quarts water

AVOCADO CREAM:
1 jalapeno, seeded
1 large avocado
low fat sour cream
1 tsp lime juice
salt and pepper

 

DIRECTIONS:

1. Saute onions with butter
2. Add remaining ingredients
3. Simmer on medium to medium high for 45 minutes
4. Blend all
5. For cream blend all ingredients together.
