  • Stephane Beaucamp, Executive Chef

    By way of Normandy, Paris and Los Angeles, Stephane Beaucamp knew he wanted to live a simple, eco-friendly, organic lifestyle in Texas. And as Executive Chef, he brings together clean, fresh, sensible and flavorful foods for Lake Austin Spa Resort guests.

    Born in Argenteuil, just outside Paris, Chef Beaucamp was convinced that he wanted to cook professionally after spending a summer helping out at his uncle’s bistro in Arromanches, Normandy as a young boy. He attended the Belliard Culinary School in Paris, apprenticed in the traditionally run kitchens at the city’s elegant Hôtel Plaza-Anténée, then cooked at the celebrated Grand Café des Capucines and two other Parisian landmark restaurants. He had his first experience of health-conscious cookery at the famous spa of Enghien-les-Bains and the Hôtel le Trianon in Versailles. While cooking eclectic contemporary food at the trendy Parisian restaurant and club, Barfly, he worked his way up to executive chef, which led him to the Buddha Bar under the direction of Kazuto Matsusaka, and the Bouchon Bistro Lyonnais on Melrose Avenue in Los Angeles. Chef Beaucamp has also cooked for many celebrities, including Elton John, Charlize Theron, Renee Zellweger, Tim Curry, Adrian Brody and Nicole Kidman (who asked him to cater her birthday party one year).

  • Tom Tuscher, Director of Food and Beverage

    As the Director of Food and Beverage, Tom Tuscher oversees all aspects of the dining facilities at both the resort and the spa. He also directs the development of the beverage program and hosts wine tasting at the resort.

    Tom’s passion for service started when he was a part-time cast member at Walt Disney World in Orlando, Florida. That part-time job turned into a full-time career lasting over 25 years in attractions, food and beverage, and hotel operations in several of the theme parks and resorts.

    Prior to joining Lake Austin Spa Resort, Tom worked for close to six years as the Director of Operations for Levy Restaurants at AT&T Center in San Antonio, Texas, home of the San Antonio Spurs. Tom was responsible for all premium food service, including 60 luxury suites, the Terrace Club restaurant, four mini restaurants, six bars and catering for the team and corporate groups up to 6,000 guests.

  • Trisha Shirey, Director of Flora & Fauna

    Trisha Shirey's 28-year association with Lake Austin Spa Resort has resulted in organic herb and vegetable gardens, an organic orchard and a wealth of flowers to enhance the grounds and brighten the delicious low-fat dishes served in the dining room. Plantings are designed to be Texas tough, but beautiful. Despite the foraging deer, flowers are in evidence year round. Many of the gardens are designed to delight butterflies and hummingbirds, which are seen in abundance.

    Crafts are another of Trisha’s interests and she teaches classes such as pressed flower designs, potpourri, painting pots and herbal swags to the guests at Lake Austin Spa Resort. She has participated in the writing, editing and testing of two cookbooks for the resort and teaches cooking classes as well.

  • Sharon Rekieta, Ph.D., Fitness Director

    Sharon Rekieta is a native Texan who joined the Lake Austin Spa Resort as the Fitness Director. Her professional experience spans 25 years and includes owning and operating a fitness facility in Houston for 12 years, training and supervising diverse personnel, developing and presenting corporate wellness curriculums, instructing a variety of fitness classes, leading conditioning workouts for endurance athletes and counseling professional and recreational fitness enthusiasts. Sharon teaches a variety of workouts and considers the time interacting with guests during the various activities as the best part of her day.

    Realizing the strong connection between the body and mind and wanting to gain insight into the actions of those she taught and trained, Sharon pursued an advanced degree and earned a Doctorate in Clinical Psychology from the University of Memphis in 2002. Her research projects focused on common psychological issues within the fitness realm such as adherence, motivation and behavior change. This background allows her to “open the therapeutic door” for those wanting to improve their overall quality of life by launching a healthy endeavor, stopping a deleterious habit, or simply gaining an understanding of the benefits of maintaining a healthy lifestyle.

  • Paul K. Smith, M.Ed. & E-RYT

    Paul Kevin Smith, M.Ed., E-RYT, Fitness Professional
    Paul’s signature session is Functional Movement Screening.  He also offers traditional fitness training; yoga & meditation instruction; mobility and stability assessment; TRX suspension training; foam roller training; swim lessons; Pilates matwork & reformer training; resting metabolic rate testing; and Tarot readings.  Originally from Midland, TX, Paul grew up in Abilene, & Houston, Texas and Trinidad, West Indies.  He attending the University of Texas at Austin, earning a B.A. in English, a B.S. in Geology, & a M.Ed. in Kinesiology (Health Promotion and Fitness).  Paul’s certifications include A.C.S.M. Registered Clinical Exercise Physiologist & Certified Health Fitness Specialist, Yoga Alliance Experienced Registered Yoga Teacher (500 hours), Certified Hatha & Vinyasa Krama Yoga Instructor & Integrative Yoga Therapist, Functional Movement Systems Provider, TRX Suspension Trainer, Physical Mind Pilates Matwork 101, and Ayurvedic Institute Home Study Program.  His personal wellness philosophy is:  “Stay active by doing fun things!”  Paul’s hobbies include hiking, raising fish in aquariums, reading, watching movies, and listening to music.

  • Katherine Coffee, PhD & RYT

    Katherine Coffee, PhD; RYT; LSC, Fitness Professional & Stress Management Coach

    Katherine’s signature session is Stress Management Coaching for General Stress Relief, Emotional Eating, Revitalizing Health & Improving Athletic Performance.  She also offers traditional fitness training; resting metabolic rate testing; healthy eating habits; Pilates matwork & reformer; yoga instruction; foam roller training; and private group trainings and classes.  Originally from Houston, Texas, Katherine has a BA in Kinesiology from Southwestern University in Georgetown, Texas, MEd in Health Education from the University of Texas at Austin, and a PhD in Health Promotion from UT Austin.  Her certifications & licenses include Licensed Stress Management Coach & HeartMath® Provide, ACSM Health Fitness Specialist, ACE Personal Trainer and Lifestyle & Weight Management Coach, AFAA Instructor & Traine, Arthritis Foundation YMCA Water Instructor, Reebok Cycle Instructor, Yoga Alliance 200-hour Registered Yoga Teacher, YogaFit® Instructor, AEA Water Instructor, and Les Mills BODYFLOW® Instructor.
    Her personal wellness philosophy is: “Variety is key and attitude is everything!”  Katherine’s hobbies include dancing, trail-jogging, water sports, knitting, and gluten-free baking.

  • Tracy York, General Manager

    As General Manager of Lake Austin Spa Resort, Tracy York oversees all aspects of the daily operation of this 40-room resort as well as The LakeHouse Spa. During her 15-year tenure, she has overseen a multimillion-dollar renovation of every building on the physical plant, including all guest rooms, all public areas, two kitchens and the grounds. The LakeHouse Spa, a 25,000-square foot spa facility and the Pool Barn, offering a junior Olympic-length lap pool, were added to the property in 2004. These physical plant improvements along with dramatic improvements in staff training and guest service offerings have resulted in Lake Austin Spa Resort consistently being recognized as a top-ranked destination spa in North America by the travel industry.

    Prior to her appointment at Lake Austin Spa Resort, Tracy was the Director of The Spa at the Crescent, a luxury spa, fitness and wellness facility managed by Rosewood Hotels and Resorts, a management company with five-star hotels and resorts around the world. In this role, she managed all aspects of the private fitness facility and the public day spa. In addition to her management responsibilities at The Spa at the Crescent, Tracy served on the development team for Rosewood hotels designing spa and fitness facilities for new hotels and resorts around the world. She is a contributing author for the ACSM’s Guidelines for Exercise Testing and Prescription, 5th ed. (Williams and Wilkins, 1995) as well as for a textbook for wellness professionals entitled Health Fitness Management (Human Kinetics, 1997). Tracy also served as a Section Editor for the ACSM’s Resource Manual to the Guidelines, 3rd and 4th ed. (Williams and Wilkins, 1998, 2001).

  • Robin Jones, Spa Director, LakeHouse Spa

    From developing innovative new treatments to retaining a talented staff of therapists, Robin Jones creates an extraordinary experience for guests of the LakeHouse Spa. As Spa Director, Robin brings passion, knowledge and hands-on experience to the Lake Austin Spa Resort.

    Robin began her career as a Massage Therapist, operating her own business before joining the Sanctuary at Kiawah Island in South Carolina as Spa Director in 2003. Her career as a Spa Director for luxury spas subsequently led her to The Grand Del Mar in San Diego. As the opening Spa Director, Robin developed the standards and culture for both properties and they have achieved the esteemed Five Star, Five Diamond rating.

  • Robbie Hudson, Director of Programming

    Robbie Hudson began her career with Lake Austin Spa Resort in 1989 and has been the Director of Programming for over 15 years.

    She attended Texas Tech University, received a Bachelor of Science in Education and holds a Texas Teaching Certificate. Electing not to pursue the conventional classroom, her love for movement and specifically dance, led her to begin teaching aerobic dance classes when it was a brand new idea back in the early 1980's. In the mid-eighties she taught franchised classes for Body Business, Inc. in the Lake Travis area. She became certified through the Aerobics and Fitness Association of America (AFAA) in its early days and went on to receive certifications with the American Council on Exercise (ACE), the Aquatics Exercise Association (AEA), Physical Mind Institute Pilates, and also became a Nia Blue Belt Instructor.

    For the first several years at Lake Austin Spa Resort she taught many different types of exercise classes for our guests. In recent years Nia Dance is the modality of movement she enjoys most because of the strong mind/body connection with music and the freedom and release that it offers.

    She enjoys interacting with people and is motivated to help them find ways to have a fun and active lifestyle. She is an avid reader, gardener, walker, Spurs fan and can play a pretty mean game of Texas Hold'em poker.

    She loves to plan and organize and devotes most her attention now to the behind the scenes orchestration of special classes and events.
