One on One with Jeffrey Elliot

Jeffrey Elliot has a degree from the Culinary Institute of America and has cooked at prestigious restaurants such as Le Cirque, and Le Bernardin in New York. Since leaving the kitchen, he's owned an antiquarian bookstore, gotten an MBA, been a stockbroker, and worked for Share Our Strength, a not-for-profit dedicated to eradicating childhood hunger in America. Currently, Jeffrey is the Director of Culinary Relations for Zwilling JA Henckels, Demeyere, and Staub, as well as the Executive Chef and Brand Ambassador of Zwilling JA Henckels USA. He’s the co-author of The ZWILLING J.A. HENCKELS Complete Book of Knife Skills, a 400 page guide to use techniques and care published by Robert Rose.
What is your favorite kitchen tool and why? The chef's knife, because every recipe starts with a knife!
What or who inspired you to want to cook? My piano teacher quit and told my parents to stop wasting their money I would never play the piano. I still needed a creative outlet and found that cooking was the perfect way to express myself.
What was you best meal ever in a restaurant? The meal where I proposed to my wife and she said yes, sitting at the sushi bar at Morimoto restaurant in New York.
What is your favorite herb or spice and why? My foundation in cooking is in the French kitchen, so I love thyme for its flavor and versatility; it works with any meat, fish, vegetable or poultry.
What is your "food philosophy"? My philosophy is to use really great ingredients, and let them speak for themselves, in other words keep it simple.
What is your fondest memory growing up and in the kitchen? My grandmother (Bubbie) would make kugel (a Jewish baked noodle pudding) garnished with maraschino cherries, and as a kid I used to sneak into the kitchen while it was cooling and eat all of the cherries off of the top and blame it on my aunt.
When you are raiding the refrigerator late night, what is your favorite midnight snack? Definitely ice cream!
What is your favorite spa treatment? I am most looking forward to a massage!
