Bumper Crop of Basil

This summer we have a bumper crop of basil – 29 different varieties! That’s one for each year that I have been here at the spa. I didn’t plan it that way, that’s just what I found this year. Some of our old favorites are back, like Mrs. Burn’s lemon basil.

Last year this basil was so popular that I planted an entire row of Key Lime Basil. So there is plenty for guests, staff and the kitchen. I love the flavor in lemonade, with tomatoes and even in watermelon margaritas!

Some herbs are seasonal, even in the mild climate of central Texas, and I miss cooking with basil too much to part with it altogether in the winter months. Basil loses its flavor as a dried herb, so freezing if the method I prefer to use to preserve it.

Other herbs which die back seasonally are dill, cilantro, chervil and parsley. They can be difficult to keep alive in the summer months so are worth freezing since they don’t dry very well. Lemon balm, lemon verbena and Mexican…
